Cee Bee's or Bath

I need some direction on fishing for trout or flounder. I would like to take my dad down towards pungo or pamilco river's. Not looking honey holes or anything (i can find my own fish) just need to know what to target. Would it be more open water structure or fish the banks. Do trout and other type salt water fish relate to structure like freshwater fish do? I pretty much have all the tackle i need and can get whatever i dont have. Just looking a little direction on targeting these fish. ( trout,flounder,drum).
